Baked Toffee Apple Pudding

The suet crust is baken golden brown with apples caramelising inside.


180g Self–Raising Flour

A pinch of salt

90g Shredded Suet

Cold Water to mix

4 Cooking Apples, peeled, cored and sliced

1 Tablespoon Lemon Juice

120g Demerara Sugar

1 Tablespoon Golden Syrup


Preheat the oven to 180°c/Gas 4

Sift the flour and salt together and mix in the suet. Add enough water to make a fairly stiff dough. Use half of this mixture to line a greased 1.1 litre pie dish. Add the chopped apple, lemon juice and half the sugar and cover with the rest of the dough. Moisten the edges and press well to seal. Bake for 20 minutes, then remove from the oven, spread with syrup and sprinkle with the remaining sugar. Place back in the oven and bake until golden brown for another 20 minutes or so. Serve with Custard.
